Anti-waste recipe: carrot terrine

Terrine de carottes
A simple, savory recipe that’s perfect for using up your stale bread and avoiding waste.

Ingredients for 4 persons
  • 250g of carrots
  • 80g of stale bread
  • 100g of fromage blanc
  • ½ an egg yoke
  • 4 cl of semi-skimmed milk
  • Salt
  • Cumin
  • Chives
  • Pepper
  1. Preheat oven to 160 ° C. Peel carrots and cut into slices. Cook until tender.
  2. Mix the egg yolk and milk, then add the salt and cumin. Soak the bread in the egg and milk mixture.Mix the carrots with the bread mixture and pour into a mold. Cook for 40 minutes in a double boiler. Put to the side for 24 hours in a cool place.
  3. Mix fromage blanc, chopped chives, salt and pepper. Serve the terrine with the sauce.
