Anti-waste recipe: omelette with ratatouille

Ingredients for 2 persons
- Leftover ratatouille
- 2 eggs
- Olive oil
- Herbs of Provence
- 1 pinch of salt
- 1 pinch of pepper
1. Beat the eggs using a fork with the salt and pepper
2. Heat the ratatouille in a frying pan with a drizzle of olive oil and add the pinch of Provençal herbs
3. Add the beaten eggs to the ratatouille
4. Mix with a wooden spoon
5. Let the omelette set and enjoy!
Anti-waste tip:
When you unpack your groceries, put the products with an expiration date close by at the front of the shelves so that you consume them before you have to throw them away!
