Anti-waste recipe: omelette with ratatouille

Did you know that? According to the FAO, 28% of the world's agricultural land is used each year to produce the food that is lost or wasted in the world. In order to fight against food waste at home, we suggest you to reproduce this anti-waste recipe elaborated by Expliceat.

Ingredients for 2 persons
  • Leftover ratatouille
  • 2 eggs
  • Olive oil
  • Herbs of Provence
  • 1 pinch of salt
  • 1 pinch of pepper

1.    Beat the eggs using a fork with the salt and pepper


2.    Heat the ratatouille in a frying pan with a drizzle of olive oil and add the pinch of Provençal herbs 


3.    Add the beaten eggs to the ratatouille


4.    Mix with a wooden spoon


5.    Let the omelette set and enjoy!

Anti-waste tip:

When you unpack your groceries, put the products with an expiration date close by at the front of the shelves so that you consume them before you have to throw them away!
