Anti-waste recipe: smoked carrot peelings

Did you know that? According to the ADEME, each French person throws away an average of 7kg of still packaged consumable food per year. In order to fight against food waste at home, we suggest you reproduce this anti-waste recipe elaborated by Chef Paul Basciano, Elior North America.

Ingredients for 2 toppings
  • 6 to 8 carrot peelings
  • 1 tablespoon tahini
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 teaspoon soy sauce light
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked sauce
  • ¼ teaspoon paprika
  • ½ tablespoon garlic powder
  • ¼ teaspoon black pepper

1.    Mix all ingredients except carrot peelings in a bowl to make the marinade


2.    Preheat the oven to 200°C


3.    Peel the carrots and marinate the peelings in the bowl for at least 30min


4.    Place the peelings evenly on a baking sheet and bake for 12 to 15 minutes in the oven until crispy


5.    Return them regularly 


6.    Place the smoked "chips" on your plate and enjoy!

Chef's tip:

You can use the peelings from all varieties of carrots to add color to your dishes.
