Anti-waste recipe: tempura of zucchini peelings

Did you know that? According to the ADEME, 30 kg of food on average are thrown away every year per inhabitant in France. In order to fight against food waste at home, we suggest you to reproduce this anti-waste recipe elaborated by Expliceat.

Ingredients for a dozen pieces
  • Zucchini peelings
  • 1 egg
  • 20 g of cornstarch
  • 70 g of flour
  • 1 pinch of salt
  • 1 pinch of pepper
  • 20 cl of fresh water
  • 1 tablespoon of herbs de Provence
  • 15 cl of olive oil

1.    Whisk the eggs, flour and cornstarch


2.    Without stopping whisking, add the fresh water bit by bit


3.    Add salt, pepper and herbs de Provence


4.    Take a frying pan or deep fryer and heat the oil 


5.    Take the zucchini peelings and dip them in the Tempura preparation and fry them for 30 seconds on each side


6.    Put the tempura of zucchini peelings on paper towels
