Bulgur, cashew nut and vegetable salad

Try out this recipe created especially for professional cyclists: an ideal evening meal for building up their strength the night before a sports event.
Ingredients for 4 persons
- 100g of dry bulgur
- 40g of cashew nuts
- 30g of tomatoes
- 20g of fennel
- 30g of dried raisins
- 25g of pine nuts
- 10g of olive oil
- 10g of rapeseed oil
- 20g of fresh white onions
- 40g of black olives
- 8g of fresh lemon juice
- 3g of fresh mint
- 2g of fresh parsley
- Cook the bulgur in boiling salted water for 10 minutes. Use cold water to stop cooking
- Cut white onions finely
- Finely chop the mint and parsley
- Mix the cashew nuts, dried raisins, pitted black olives, lemon juice, olive oil, rapeseed oil and salt
- Add bulgur, tomatoes and finely chopped fennel to mixture
- Roast the pine nuts
- Sprinkle over the salad
