Cucumber, avocado and mint gazpacho

Ingredients for 4 persons
- 250g of cucumbers
- 100g avocado
- 1/2 a shallot
- A few fresh mint leaves
- 10cl of cider vinegar
- 8g of brown sugar
- Rinse and peel the cucumber, avocado and shallot
- Rinse the fresh mint
- Cut the cucumber and avocado into cubes and finely chop the shallot
- Pour all the ingredients into the blender pitcher and mix until smooth
- Add salt and pepper according to taste
- Present in small glasses
- Serve well chilled.
