Cucumber, avocado and mint gazpacho

Ingredients for 4 persons
  • 250g of cucumbers
  • 100g avocado
  • 1/2 a shallot
  • A few fresh mint leaves
  • 10cl of cider vinegar
  • 8g of brown sugar
  1. Rinse and peel the cucumber, avocado and shallot
  2. Rinse the fresh mint
  3. Cut the cucumber and avocado into cubes and finely chop the shallot
  4. Pour all the ingredients into the blender pitcher and mix until smooth
  5. Add salt and pepper according to taste
  6. Present in small glasses 
  7. Serve well chilled.
