The Halloween salmon and broccoli burger

Getting children to like broccoli... mission impossible, surely? Not for Stefano Sibona, Chef Manager at Hospes, Elior Italy, who created this mind-changing recipe for the Elior Food Academy.

Ingredients for 1 hamburger
  • 1 seeded burger bun
  • 60 g of cooked broccoli
  • 80 g of cooked salmon
  • 1 boiled potato (mashed)
  • Breadcrumbs, salt and black pepper
  • 30 g frisée lettuce
  • 1/2 tomato
  • 1 piece of cucumber
  • 1 stuffed olive
  • 1 drizzle of extra virgin olive oil

For the low-calorie mayonnaise
  • 1 whole egg
  • 230 ml of vegetable oil
  • 15 g of lemon juice
  • 4 g of salt
  • 120 g of Greek yogurt

Preparation of the salmon and broccoli “steak”

1. Crush and mash the broccoli with a fork

2. Flake the cooked salmon and add it to the broccoli together with the mashed potato

3. Season with salt, pepper and add sufficient breadcrumbs to create the ideal consistency

4. Take a handful of the mixture and shape it into a burger patty

5. Pan fry with a drizzle of olive oil

Preparation of the mayonnaise

1. While the patty is cooking, make the mayonnaise: put all the ingredients – except the Greek yogurt – into a blender jar (at room temperature)

2. Use a hand blender in contact with the base of the jar, and blend until the emulsion is the right texture

3. Gently fold in the Greek yogurt

Assemble the burger

1. Serve in a seeded burger bun spread with a thin layer of mayonnaise topped with salad and tomato slices

2. Use a vegetable peeler to slice a ribbon of cucumber and insert it between the patty and the top half of the bun to create a “tongue”

3. Halve the stuffed olive and use wooden toothpicks to fix them onto the burger like a pair of eyes

4. Serve and wait for compliments!
