Pepper and courgette gaspacho

Gaspacho
During the 2020 and 2021 sports seasons, Elior chefs will be cooking meals for the professional racing cyclists of the Total Direct Energie team. Try out this recipe created especially for professional cyclists.

Ingredients for 4 persons
  • 1.6 kg of courgettes
  • 2 red peppers
  • ½ clove of garlic
  1. Wash and peel the courgettes and peppers. Cook them in boiling water.
  2. Drain and put the cooking water to the side.
  3. Add the garlic and mix everything together.
  4. Salt and pepper and place in a cool place.

The recipes for cyclists are designed to meet the very strict nutritional criteria to boost the champions’ performance for each leg of the race.
